Video | Traditional Cantonese Cuisine: Yummy Pork 好味肉
语音播报

This video features Yummy Pork produced by Chuangfa Restaurant (创发餐厅), a Michelin restaurant for four consecutive years.

Made from pork belly, this signature dish resembles Gulou Yuk (Sweet and Sour Pork), a traditional Cantonese dish. It tastes sweet, crispy, puffy and melting in the mouth.

Being nominated by Michelin for four consecutive years is an encouragement to us, but it's nowhere compared to the support of our customers.

I'm the owner of Chuangfa Restaurant. People like to call me Elder Sister Wen. Chuangfa has opened for 26 years.

This dish used to be called Crispy Pork, which has a melt-in-the-mouth texture and tastes puffy, sweet and yummy. Later we found that yummy might be an easier word to remember, so we renamed it Yummy Pork. It's cost effective. With a price of about 40 yuan, it can be shared by six to eight people.

This dish has been served for 10 years and it tastes sweet, crispy, puffy and melting in the mouth. We mainly use pork belly to cook it. Pork with fat is a must. You can't make it this good with lean meat only.

Secret recipe jam must be prepared in advance. It will become gelatinous at high temperature, giving the pork a sticky and slimy coating.

Some customers would still come back even after they'd moved to other neighborhoods. I'm so happy to see them again.
