
Sourdough rice noodles(生榨米粉), also called hand-pressed rice noodles, is a kind of traditional rice noodles that is made from fermented rice pulp and tastes a litter sour.
This video features sourdough rice noodles produced by the first restaurant of its kind in Guangzhou named Beauty's Sourdough Rice Noodles (靓姐生榨米粉), which has made its way into the Michelin Guide for consecutive three years. Its marinated toppings, especially the pork intestines, are quite popular among the customers.

Why did Michelin recommend us? We were a little stunned at the news and we didn't attend the award ceremony.
The sourdough rice noodles are one of the specialties of my wife's hometown. She is from Nanning. She's very pretty, so I changed my restaurant's name into Beauty's (Sourdough Rice Noodles).
When I opened this restaurant, it was the first of its kind in Guangzhou. The main reason why Michelin recommends us or why we have so many repeat customers is that we've maintained the good quality of the ingredients. The noodles are made by soaking, grinding and fermenting the rice all by hand, which is not something everyone can master and there's no way for others to duplicate.
After several days' fermentation, the rice noodles taste much sour, which couldn't be accepted by the Cantonese, so we had to shorten the fermentation time later.
As for the toppings, pork intestines are most preferred. The marinated toppings in one bowl of assorted rice noodles include pork intestines, duck kidneys, pork belly and an egg.
