
Yee Mee /Yi mein is a type of Cantonese noodles made from egg and wheat flour. It has a chewy and spongy texture owing to the fried and then dried process.
This video features Yee Mee produced by Jianji Noodles(坚记面店Jianji Miandian), a popular eatery awarded by Michelin for three consecutive years.

Some people would ask me, “Why you slipped the opportunity of making more money? Do you detest money?”
I replied, “No. Since Yee Mee is a handmade product, I worry its quality would be affected with more branches opening.”
That's why we don't have any branches, and only keep this one now.
The process of making Yee Mee is relatively complicated, so many people don't like to do it. The only traditional Yee Mee store left is ours.
I've never changed the production process, just making it in the traditional way: handmade, without any addictive.
We eat Yee Mee twice a day, while the customers come only once a day. If we add addictive in Yee Mee, we would be affected more than them.
The most important trick to cook pig's trotters and flank is to avoid using pressure cooker because it will break the fiber of the meat and make it taste like rags.
This year has been the third year that we've been awarded by Michelin. I'm 61 years old now, and I'll work as long as my health permits. I hope that an heir who would embrace Yee Mee with heart will appear someday.
