Nowadays the Lunar New Year atmosphere is not as festive. If we fail to persist the tradition, when it comes to the next generation, this kind of snack may become unknown.
Candied winter melon is the major candy among those prepared for the Lunar New Year. It's a necessity for Dongguan people during various festivals.
My name is Xu Zhimin. I am the fourth generation heir of Rixing Candy. Till now, Rixing Candy has lasted for more than 90 years.
A tradition we've always followed is that no food with additives will be made.
Ours is a family workshop. Hiring other staff cannot guarantee the quality. It is better to regulate the quality by our own family.
We've developed a kind of candied winter melon made of crystal sugar. It has a crispy outer layer and sugar filling inside. Softness can be felt within a bite, as well as the melt-in-the-mouth texture.
No matter how hard it is, we will persistently adhere to the tradition, retaining the quality.
