Fish skin salad (爽鱼皮shuang yu pi ) is a refreshing Cantonese snack. Made with boiled fish skin, peanuts, ginger, scallions, and soy sauce, this  cold dish is bursting with umami and seafood flavors.

This video features fish skin salad produced by Chan Tim Kee (陈添记Chen Tian Ji), a popular eatery with more than 40 years' history which draws locals and tourists alike. It only sells three items: fish skin salad, traditional Sampan congee and rice noodle rolls.

Actually“Fish Skin Xishi (Beauty)” is a nickname given by our customers. It can be seen as a compliment for us.

I'm Huahua, the third generation heir of Chan Tim Kee. Chan Tim Kee is named after my grandpa. It has been over 40 years since my grandpa founded this eatery.

We use the local dace from Shunde city. We also have grass carp. Fish is freshly slaughtered every day, and all fish skin will be sold out every day.

On the holidays, say the National Day, around 1000 plates of salad can be sold.

Many people would ask me why you only sell three kinds of dishes, why not more. It’s easy to put other dishes on shelf, but to guarantee the quality,

which means the meals taste good every day, is the most difficult.

The most fulfilling thing is to see every customer eat up their fish skin salad, and hear their comments, “It's very delicious.”
